Curry Channa Recipe
Channa is chickpeas cooked in curry. You can have channa with rice, in sandwiches and as done in the Caribbean served with roti.
What You'll Need
Chickpeas also known as channa.
2 tablespoon curry seasoning (Nerpy`s)
1/4 teaspoon salt (add more to your taste)
6 whole allspice berries
1/2 medium onion sliced thin
1/4 scotch bonnet
3 cloves garlic – crushed and minced
2 medium potatoes cubed
1/2 tomato
2 tablespoons water for the curry paste
4 tablespoons water to add to the cooked curry
2 1/2 cups water
2 tablespoon olive oil
Cooking Instructions
- Slice your tomato and mince your onion, pepper, and garlic. At this time you can also peel and dice your potato.
- In a deep sauce pan, heat your olive oil to medium to high heat.
- Add your curry to the heated oil so to release the flavors in the curry.
- When the curry darkens add the onions, tomato, garlic and pepper then add 4 tablespoons of water and allow the mixture to cook for 4-8 minutes.
- When the onion and garlic has softened add and stir the potato.
- Pour in 2 1/5 cups of water then add salt and six whole allspice berries bring to a boil then reduce to a simmer. Allow to cook for about 20 minutes. (pot covered)
- After 20 minutes you’ll notice that the gravy has greatly reduced. To your preference add water and stir to make the gravy.
